Maria’s been travelling around the UK getting chefs hot under the collar as she shows off her goodies in spice masterclasses across the country. The chefs have flattered her with their sweet talk and some have offered up recipe inspiration for others who want to get their hands dirty.
Andrew Nutter couldn’t wait to play around with Maria in the kitchen. Always one to keep it spicy, Nutter created a fiery dish of honey glazed duck leg confit with Maria’s Wasabi & Sesame, Asian slaw and coriander oil for fresh flavours with a bite.
Eric Snaith dished up roasted baby pineapple in a cinnamon bun with cinnamon toast ice cream when Maria dropped in to Titchwell Manor. Seasoned with cardamom, star anise and Tellicherry (plus plenty of cinnamon), it was sweeter than Maria.
For Tellicherry fans, you’re in luck – there’s a treasure trove of recipes to experiment with. Simon Hulstone’s bitter chocolate and Tellicherry pepper tart really shows the depth of flavour black pepper has to offer. Lee Desanges cooked up a killer recipe for Keralan spiced chicken wings with Tellicherry black pepper hot sauce. For those feeling piggy, there’s Luke Tipping’s crispy pork bonbon with apple puree and watercress salad. Making full use of his dry store, Luke’s recipe calls for oregano, bay leaves, cloves, thyme and a grind of Tellicherry to taste.
